Course Description
Part 1 of 2-semester course sequence. Course focuses on applying Nutrition Care Process to determine weight-inclusive medical nutrition therapy for patients/clients experiencing physiological stress or disease using evidence-based guidelines.

Student Learning Outcomes, Goals, Objectives:
Students successfully completing this course will be able to:
Demonstrate the ability to conduct an interview and complete a nutrition assessment.
Demonstrate an understanding of the pathophysiology, diagnosis, and medical treatment of diseases/conditions across the lifespan.
Determine the appropriate medical nutrition therapy (therapeutic diets, nutrition support, and vitamin/mineral supplement therapy) for patients experiencing physiological stress or disease.
Identify the steps of the Nutrition Care Process (NCP) and use the NCP to make decisions, identify nutrition related problems, and determine and evaluate nutrition interventions for a variety of medical conditions.
Document steps of the Nutrition Care Process using the ADIME (Assessment, Diagnosis, Intervention, Monitoring, Evaluation) format.
Calculate nutrient requirements across the lifespan for a variety of medical conditions (including diabetes, cardiovascular disease, renal failure).
Determine the appropriate medical nutrition therapy (therapeutic diets, nutrition support, and vitamin/mineral supplement therapy) for patients experiencing physiological stress or disease.
Perform routine health screening including measuring blood pressure, nutrition focused physical exam.
Evaluate professional literature and evidence-based guidelines in order to make ethical, evidence-based practice decisions.
Demonstrate appropriate counseling and education methods for patients and clients in a variety of different practice settings such as inpatient, outpatient, and long-term care.

Courses that enroll undergraduate and graduate students concurrently (i.e., 600 level courses) must have more stringent standards for grad students. This is a mandate from SACS. These are the additional criteria by which you’ll be judged. Graduate students will compile evidence on a dietary supplement used in the treatment of a chronic disease state. Graduate students will have an additional exam question on each exam.
Attendance/Participation:
Attendance in class is strongly encouraged and attendance in the laboratory is mandatory. If an absence in lab is necessary, please contact the instructor prior to the start of the lab you will miss in order to provide documentation/explanation of absence. Excused absences are not given for vacations, travel, or appointments. Absence from the lab without a valid excuse will result in loss of 10 points for each lab missed.
