Advanced Nutrition

Course Description

Biochemical and physiological aspects of nutrient metabolism and utilization. Nutrient metabolism, flux, and requirements during the lifecycle and during fed/fasted states will be discussed, with emphasis on mechanisms that regulate these processes. Prerequisite: Grade of C or better in NTR 531 or equivalent as determined by the instructor.

Student Learning Outcomes, Goals, Objectives:

Students successfully completing this course will be able to:

  • Achieve a greater understanding of our need for food and the ways in which nutrients are utilized by the body. Explain how energy is obtained from foods and how vitamins or minerals facilitate this process.
  • Describe mechanisms of nutrient digestion, absorption, transportation, and utilization. Explain the etiology and treatment of disorders associated with these processes.
  • Evaluate how specific changes in nutrient metabolism within cells impacts tissues, organs, and whole-body systems. Demonstrate knowledge of the mechanisms involved in the regulation of cellular metabolism at the transcriptional, translational, and post-translational levels, including regulation of rate determining enzymes by increasing or decreasing enzyme concentration, and covalent and allosteric modifications.
  • Integrate the metabolism of carbohydrates, lipids, and proteins (i.e., intermediary metabolism) within cells and between cells under various physiological and hormonal conditions. Identify mechanisms of regulation of intermediary metabolism, including during periods of feeding, fasting, exercise, and disease.
  • Identify specific nutrient needs during physiological states and explain how dietary, hormonal, and biological factors may interfere with nutrient adequacy.
  • Identify nutrient-dense foods and eating patterns that promote optimal nutrient utilization and health.

Attendance/Participation:

Students are required to attend all classes. It is the student’s responsibility to notify the instructor in advance to seek an “excused” absence. If a student misses a class without prior approval, that student will not be eligible to take the final exam, or use the final exam for an exam replacement. Student participation is an important component of this course. Students are expected to demonstrate a strong level of critical thinking related to assigned readings, class materials and discussion topics.
