Course Description
Study of communication of nutrition science through nutrition education, professional literature, and public media. Evaluation and use of professional and scientific literature in nutrition and food systems. Prerequisite: Grade of C- or better in NTR 213; Grade of C- or better in ENG 101; Written permission required.

Students successfully completing this course will be able to:
- Identify the principles of theory-based, behavior-focused nutrition education programming
- Synthesize nutrition science concepts into effective oral and written communication for professional and public audiences
- Construct a nutrition education program integrating evidence from scientific literature
- Analyze characteristics and needs of target audiences to inform the design of appropriate nutrition education materials
- Evaluate the quality and applicability of nutrition information in peer-reviewed literature and materials for lay audiences
