Course Description
Basic principles of human nutrition with emphasis on the nutrients and factors which affect their utilization in the human body.

Student Learning Outcomes under the minerva academic curriculum
Upon completion of the course, students will be able to:
Demonstrate knowledge of factors that contribute to physical and/or mental health (SLO1). To assess SLO1, students will demonstrate their knowledge of how diet contributes to health by completing the MyPlate Analysis Project which involves tracking 3 days of their dietary patterns and writing a reflective statement about how their patterns compare to recommendations and can influence their long-term health.
Analyze the connection(s) of different aspects of wellness (i.e. choices or actions to achieve health/well-being) to the overall health of an individual or population (SLO2). This learning objective will be assessed using a practical exam, where students will identify nutrient deficiencies that are associated with specific health risks.
Synthesize information from multiple sources to support arguments and/or inform decisions (SLO3). Using a practical exam, students will use information on (1) food choices, (2) nutrient intake concentrations, and (3) federal nutrient and dietary recommendations to evaluate the dietary patterns of a hypothetical college student and make recommendations for change.
Integrate and cite sources accurately and correctly (SLO4). Students will demonstrate their ability to appropriately identify and use available federal resources that provide evidence-based recommendations on diet and nutrient intake through a 20-question quiz (Quiz #2). In the Reflective Statement portion of the MyPlate Analysis project, students will cite a research publication as supporting evidence of a positive or negative health consequence caused by dietary patterns.

Attendance/Participation:
As the course material will be delivered online, asynchronously there is no requirement for Attendance in this course. However, there is the expectation that you will participate in all of the areas of the Canvas course, including viewing lecture recordings, reviewing course slides and completing all assignments by due dates.

Visualizing Nutrition: Everyday Choices, 5th Edition (Wiley Publishing) This textbook is required and can be purchased/rented through various sources. This textbook will be available through First Day if you choose to opt in to the First Day program.
