Introductory Nutrition

Course Description

Basic principles of human nutrition with emphasis on the nutrients and factors which affect their utilization in the human body.

Student Learning Outcomes, Goals, Objectives:

Students successfully completing this course will be able to:

  • Demonstrate knowledge of factors that contribute to physical and/or mental health (SLO1). To assess SLO1, students will demonstrate their knowledge of how diet contributes to health by completing the MyPlate Analysis Project which involves tracking 3 days of their dietary patterns and writing a reflective statement about how their patterns compare to recommendations and can influence their long-term health.
  • Analyze the connection(s) of different aspects of wellness (i.e. choices or actions to achieve health/well-being) to the overall health of an individual or population (SLO2). This learning objective will be assessed using a practical exam, where students will identify nutrient deficiencies that are associated with specific health risks.
  • Synthesize information from multiple sources to support arguments and/or inform decisions (SLO3). Using a practical exam, students will use information on (1) food choices, (2) nutrient intake concentrations, and (3) federal nutrient and dietary recommendations to evaluate the dietary patterns of a hypothetical college student and make recommendations for change.
  • Integrate and cite sources accurately and correctly (SLO4). Students will demonstrate their ability to appropriately identify and use available federal resources that provide evidence-based recommendations on diet and nutrient intake through a 20-question quiz (Quiz #2). In the Reflective Statement portion of the MyPlate Analysis project, students will cite a research publication as supporting evidence of a positive or negative health consequence caused by dietary patterns.

Attendance/Participation:

While attendance is not taken, we will have activities in class throughout the semester. These are low-stakes opportunities for you to practice the concepts you are learning. You must attend class to participate in these activities and earn activity points. Attendance and participation are strongly encouraged.
